Spiced Vanilla Pickled Fennel

Meet your new favourite pickle! Destined to only spend a short-time in your fridge door, you'll find this will spice up boring breakfasts and predictable lunchs. We thinly hand-slice all the fennel, and gently pickle with a selection of spices such as allspice and corander. The flavour that brings it all together is the vanilla, we only use real vanilla pods. This imparts a lovely background sweetness, and the vanilla seeds left in the pickle only improve the flavour over time. Great on sandwiches, in salads and on morning poachies. Time to get creative!
